Eggplant Casserole Recipe - Here is our favourite way to prepare eggplants. If you use a large baking dish, 2 of these eggplants will work perfectly.
Cut 1 inch slices of eggplant .Dip them in a mixture of flour and dried spices of oregano and thyme.Braise them in olive oil for a few minutes on medium heat to slightly brown. Place them in a baking dish. Next prepare and cover them with a layer of stir fried vegetables. Our choice is onions, garlic, zucchini and broccoli. Top this off with tomato sauce to cover, then bake at 350 degrees for 15-20 minutes. On the side, stir fry some mushrooms . To serve, add a layer of bean sprouts and the mushrooms.
