Spinacia oleracea
Seeds per packet: ~75

This semi-savoy spinach is dark green, sweet and resilient to heat and drought. Slow to bolt, providing a larger harvest window.

This spinach was developed in the early 1950’s by Dutch seed house Sluis en Groot from a stabilized cross between Bloomsdale Dark Green and Viking spinach varieties.

Fun fact: researchers have shown spinach can germinate as low as -3°C!

Growing Info
Spinach will not germinate well, or at all, in warm soils. Spinach seed experiences dormancy that may prevent or reduce germination rate if sown during warm temperatures. Information below will help you to achieve spinach success.

The ideal process for starting is to expose spinach seed to moist (but not soaking wet), cold (3–5°C) conditions for about 1 week and then sow into soil that is around 15°C. This will produce the highest germination rate and speed. Spinach germination speed and percentage reduce over ~15°C.

There are different ways to achieve this ideal. Dry seeds may be put into the fridge (not freezer), lightly pressed into a small amount of moist sand or a lightly moistened paper towel for a week, then removed and sown into the field. Or, you may start transplants by using this procedure. You can also skip this chilling step and direct sow early- to mid-spring.

Spinach seeds require good oxygen supply to germinate properly. If starting transplants, avoid overwatering, and keep soil a bit drier than you would for other vegetables. Direct sowing into heavy, waterlogged soils may cause problems. Light, fluffy, well-drained soil is important. Sowing into a greenhouse to protect from the saturating rains the west coast receives in spring may also help moderate soil moisture.

Seeds should be sown 1⁄2” deep. Plant and row spacing depend on whether you want to harvest baby spinach or larger leaves. For baby leaves, space plants ~2” apart. For full sized leaves, space plants 6-12” apart.
