We are so pleased to share this beautiful fresh harvest of seed with you. I have been collecting this seed since 2016 as the viability and vigour is so much better than any parsnips on the market today. The original plants have naturalized at the garden over the last 10 years. Parsnip flowers are huge umbels or upside down umbrellas that attract large amounts of beneficial insects. Seeds are produced on the roots left in the garden overwinter. Sowing seed by mid spring produces fine creamy white roots for fall harvest. Younger roots are sweet and tender where mature roots are best roasted. Direct sowing works best, plant 1/4 inch deep.
