Foeniculum vulgare
One of our favorite perennial herbs, the original plants were donated to the garden over 10 years ago. One of the very first plants to emerge in our gardens in late winter. These deep bronze tender leaves with a hint of licorice flavour are not only delicious, they are filled with medicinal qualities. A great tonic for blood, used fresh. Rich in vitamins and minerals, it is a valuable digestive aid and general immunity booster. Useful to heal lung issues, and a great detoxifier to aid liver function. The seeds make a delicious tea. Lightly crush them before steeping to release their aroma. Ideal to add to less palatable medicinal herbs when making tea infusions. To infuse, steep for 10 minutes.
Attractive large yellow umbel flowers are loved by beneficial insects of all kinds. Grows to 6 feet tall once established.
As this plant has a tap root, better to direct sow in early spring. Cover seed lightly. As we have raised these plants for decades, they can self sow but not considered invasive. The young sprouts often end up in salads!
